You do not need a pizza oven to get a pizza with a crisp base. A cast iron skillet gets very hot and holds that heat, so the bottom turns golden while the cheese melts on top.

Did You Know?

A preheated cast iron skillet holds a lot of heat. This is why it can give pizza a crisp, browned base even in a home oven, which cannot reach the temperatures of a professional pizza oven. Preheating the pan is the key step.

For the Dough

  • 1 cup all purpose flour (maida)
  • 1/2 tsp instant yeast, 1/2 tsp sugar, 1/2 tsp salt
  • 1 tbsp olive oil, about 1/3 cup warm water
  1. Mix everything into a soft dough and knead for 5 minutes.
  2. Cover and let it rise for 1 hour.

For the Topping

  • 3 tbsp pizza sauce or a simple sauce of tomato puree with garlic, salt and oregano
  • 1 cup grated mozzarella
  • Sliced onion, capsicum, olives, sweet corn
  • Chilli flakes and oregano

Method

  1. Heat the skillet on medium for 5 minutes. Brush with a little oil.
  2. Roll or stretch the dough to fit the pan and press it in. Prick with a fork.
  3. Cook for 3 to 4 minutes with a lid on, until the base is set and golden underneath.
  4. Flip it. Spread the sauce, add cheese and toppings.
  5. Cover and cook on low for 5 to 6 minutes, until the cheese melts and the base is crisp.
  6. Slide onto a board, sprinkle with oregano and chilli flakes and cut into slices.

Tip: Keep the heat on medium to low after flipping so the base does not burn before the cheese melts.

Common Mistakes to Avoid

  • Skipping the preheat. The base turns pale and soft.
  • Using too much sauce. It makes the base soggy.
  • Overloading with toppings. Keep it light so everything cooks through.

Storage and Reheating

Pizza is best fresh. Reheat a slice in a dry pan on low heat with a lid to bring back the crisp base.

Quick Answers

Do I need to season the skillet?

A well-seasoned skillet helps with release. Use a little oil in the pan.

Can I make the dough ahead?

Yes. Dough can rest in the fridge for a day or two for better flavour.
